Hi everyone! Hope your Monday is going well. I decided that from now on I am going to make every Monday a Meatless Monday. I am also going to try and incorporate a few more meatless days throughout the week, but no promises - it just depends on what I have to cook, my schedule and what I am craving. So....wanna know about today's eats? I know you do! Here they are:
Breakfast was something new:
Natures Path Organic Buckwheat Waffles - Wild Berry Flavor. I have been eying these for MONTHS. I saw them once in Korea and then never again even though I looked for them every single time after that! Anyways, it was good. It had a nice berry flavor to it - not too much, it was just right. I topped it with some peanut butter and a banana (of course!)
2nd Breakfast was Overnight Oats w/ Fiber One Cereal, Kashi Go Lean Crunch Honey Almond Flax Cereal, maca powder, bee pollen, flax and chai seeds. OMG this is the best cereal combo EVER!!! The Kashi is so crunchy - I only used 1/4 of a cup but it totally does the trick. The fiber one is in there for fiber of course but I also kinda like the way it tastes.
Lunch was leftover tofu stir fry from last night with a piece of Popeye Bread from Great Harvest. I noticed today that my stash is dwindling so I might have to go over there (on the other side of town) this weekend and restock!
Snack time (215ish) was a pear (I'm really starting to like pears) and an individual container of Okios Vanilla Greek Yogurt. I also put some of the Kashi on top of the yogurt. I'm totally going through a crunchy phase right now.
Dinner tonight featured a new product:
Well not really new, but I have not had it in YEARS. Back when I was a vegetarian I lived on Morning Star Farms Products. This was one of my favorite things to eat. So, I got some to try again, because why not? They are so good! I made it in the over this time (but used to always do microwave b/c I was cooking in the dorms) and it was GREAT!!! The outside is nice a crispy while the inside is soft. YUM YUM. You will probably be seeing a lot more of these! Here is a link to the nutritional information if you are curios! When I was at the store today (to get 1 item and I spent 30$ but that's a whole different story) I saw this lettuce:
I just had to get it because it just looked so very good and crispy. I decided to make wraps with it!! So... I put a bit of everything into each wrap and boy it was tasty!!!! What a great dinner.
