Tonight I made butternut squash for the first time. Its VERY simple, anyone can do it. I will explain to YOU how its done so YOU can do it if YOU want. First, get yourself a squash:
Quick fact about the butternut squash - 1 cup has 82 calories, 0 grams fat and 2 grams protein.
Next you want to slice it in half:
Its so bright and pretty!
Next you scoop out the seeds with a spoon:
Then place the squash in a baking dish - you want the squash to be meat side down/skin side up. Put about 1 inch of water in the dish:
Bake at 350 for about 40 min. Then, butter it up and add some brown sugar:
Bake a few more min - between 5 and 10 ....then eat!!
I had mine with leftover dirty rice.
Easy, right?
In other news, my body is still messed up. Its making it really hard for me to not over eat... I am so exhausted these last few days. I think its hormones, but who knows. Next Wednesday I am supposed to go see the nutritionist and maybe that will help us figure out what is going wrong.
A coworker lent me a bike pump today so I pumped up my bike tires (shipping them from Korea to the U.S. they lost air) and now I should be able to go biking on Friday after work- woo hoo. I went to work early this morning and did the elliptical machine for 25 min before PT. Then during PT we walked for 40 min. So, I got a good workout. Then at work we re-arranged the office so I got even more of a workout. Probably one reason I am so tired. When I was making dinner tonight I fell asleep on the couch and only woke up because the timer on the oven was beeping constantly. Thus, I am going to bed early tonight for sure.
Last night was my first night of Yoga at FTCC. It was interesting... the teacher is definitely non-traditional. So, it will be a new experience. She is more concerned with us getting a workout and having fun than being spiritual or being in the correct posture.... I am glad I have been doing Yoga at Embrace for a few months now so that I know how to properly align my body so I don't injure myself. Anyways, it is a good experience because I get to meet new people and hopefully learn some new things. I will still be doing Yoga at Embrace on Sundays because I am in love with that class. I am considering going on maybe a Monday or Wednesday evening too.
I finally got my birthday present today. Mom gave me $$ while I was here and I had so many ideas of what I wanted to use it for it took me a while to figure it out. So, I got a Yogitoes Skidless Yoga Towel (Frog Green!) and a prAna Headband. All the remaining $$ went towards signing up for Art of the Carolinas. I am going to take the workshop titled Loosen Up and Start Abstract Painting Today. It is from 9am-4pm on Thursday and I am going to stay at the fancy convention Hotel that night (as a treat to myself). Then the next day I will go to the Expo and check out all the Art Supplies and then run around Raleigh and visit the wonderful places like Whole Foods and Trader Joes. Then I will come home Friday evening. So I get to have an away weekend Thursday-Friday and then a home weekend Saturday-Sunday. I am VERY excited about this.
Well, I guess this post has gone on for long enough! I'm gunna watch the latest American Pickers episode and then go to bed. "See" you tomorrow I hope!
