Its Thursday - that means its a Veggie Day! I came up with a good combo for dinner. It involved a easy bake sweet potato - you know the kind that come in the plastic and all you have to do is microwave them and viola! you have a baked potato? Well, they look like this:
I originally got it because I was buying regular sweet potatoes but every time I thought "oh a sweet potato would be good" I didn't feel like waiting 3 hours to bake one. Anyways, today I learned an important lesson about them. Don't keep them forever before you cook them or they will start to sprout!
And the spout will cause moisture under the plastic which will ruin the peel in that area. It didn't make the potato go bad, but I did cut off that part of the peel.
Ok, so I was thinking at lunch.."what can I have with that sweet potato that will be good?" I couldn't think of anything so I opened the freezer and I was staring in and "ah!" - Veggie Riblets! . Then I decided to saute some spinach and asparagus to go with it to get some low-cal green stuff!
It was very good. I didn't eat all of that sweet potato. The best part was the Veggie Riblets - If I die and go to vegetarian heaven then they will serve those on a regular basis I am sure. It is quite possibly my most favorite vegetarian product.
Did Physical Therapy this morning and Yoga this evening. I am worn out - my leg doesn't like so much work and my neck is really sore for some reason. Perhaps I am sleeping on it wrong or something, but either way it hurts!
I started keeping a very detailed food journal today. The nutritionist said to bring in 3 days worth of food log, but really 3 days of what I eat is not enough for them to get a good idea of my issues with blood sugar and what not. So... they shall get a weeks worth of overly detailed log! It has time and what I ate or drank, such as: finished water bottle (4 cups) and refilled it, or "banana." Also things like "I'm still hungry," which I wrote 30 min after I had a snack this morning. Also on there is what I am doing: "physical therapy," "srp," "yoga." and any weird medical stuff like the fact that I had a headache after yoga but feel better now that I had dinner. See? They asked for food log, and food log they shall get!
Lastly, I want to shout out to all my readers who are checking in from other countries! It totally makes my day when I check my "stats" (which I just figured out how to do a few days ago) and it says someone from China or Germany or Canada or Australia is reading the blog!
