I have 2 new recipes for you today! Aren't you excited? I know, its been a while - sorry, food gets boring when you are trying to lose weight. Anyways, lets get to it!
I have been looking for a Pumpkin Butter that meets my standards for a few week but never found one I was willing to pay for/eat - so I made my own.
Pumpkin Butter
1) get your ingredients:
2) in a small sauce pan put 3/4 cup pumpkin and 1/4 cup agave (I'm sure honey or maple syrup would work well too!)
Heat and stir until it all mixes together and forms a nice consistency. It takes about 10-15 min on medium heat.
3) Next add 1/4 tsp all spice, 1/4 tsp ginger, and 1/2 tsp cinnamon. It comes out very spicy (not hot, but flavorful) so if you don't like that then don't use as much. Keep cooking for a few more min.
4) Remove from heat and put into a container. Allow to cool completely before covering and putting in the fridge.
1 Tbsp = 18 calories!! This recipe makes aprox. 1 cup of pumpkin butter. Its GOOD and its lower calorie than anything I saw at the store - plus its all natural ingredients!!
Pumpkin Pancakes were next up - basically I took Angela's Helathy Spelt Pancakes for One and added pumpkin butter - 1/2 cup to be exact. Warning - they are a bit more mushy than regular pancakes...perhaps I will work on tweaking this recipe later, but it was good, so if you are in the mood for pumpkin pancakes try it out.
Pumpkin Pancakes
1) get your ingredients:
2) put all of them in a bowl: 1/2 cup (60g) spelt flour, 1 tsp baking powder, 1/2 tsp cinnamon, 1/8 tsp maca powder (this is optional), 1/2 cup almond milk & 1/2 cup pumpkin:
3) Stir it all up and then cook like regular pancakes:
4) Plate em', and add some sugar free syrup (or any syrup of your choosing) - then, enjoy!
Total calories for pancakes (provided you use the same ingredients as I did!) = 250 calories, syrup not included. If your really in the pumpkin mood you can put some of your pumpkin butter on top too!
